Vanilla Cupcakes

Ingredients
63.5g butter
1/4 cup caster sugar
1 egg
1 teaspoon vanilla essence
1 cup self raising flour
1/2 cup milk
2 cups icing sugar
1 teaspoon butter
4 tablespoons hot water
Food colouring

Method
Cream butter and caster sugar together until light and fluffy.
Add egg and beat well.
Blend in vanilla.
Gently fold flour into creamed mixture alternately with milk until well combined.
Spoon mixture into patty paper lined muffin tins until 3/4 full.
Bake in a moderate oven for 15 to 20 minutes.
Transfer to a wire rack to let cool completely.
Place icing sugar and butter into a bowl.
Beat in sufficient water to make a spreadable consistency.
Add colour a few drops at a time until the desired colour is achieved.
Spread over cold cakes.
