Sweet and Sour Pork

Ingredients
2 teaspoons cornflour
1 tablespoon soy sauce
1 tablespoon tomato sauce
2 tablespoons caster sugar
1/4 cup white vinegar
1/4 cup orange juice
1 1/2 tablespoons peanut oil
400g pork fillet
1 onion
1 green capsicum
1 red capsicum
1 can pineapple pieces
1 cup rice

Method
Cook rice to packet instructions.
Thinly slice pork fillet.
Peel and cut onion into wedges.
Cube capsicums.
Combine cornflour, soy sauce, tomato sauce, sugar, vinegar and juice in a jug.
Stir to combine.
Heat a wok over high heat.
Add oil swirl to coat and stir fry pork for 2 minutes.
Remove pork. Add onion, and capsicums to the wok.
Stir fry for 1 minutes.
Add pineapple, stir fry for a further minute.
Return pork to wok.
Add sauce.
Stir fry for 2 minutes.
Serve on a bed of rice
