Spanish Pork with Pineapple

Ingredients
¼ cup butter
1kg boneless pork
1 tablespoon sugar
3 tablespoons flour
Salt
Pepper
2 onions
3 cups beef stock
1 teaspoon coriander
2 tablespoons warm water
1 clove garlic
1 teaspoon chilli powder
2 tomatoes
1 can pineapple pieces
2 potatoes
2 cups rice

Method
Cut pork into cubes.
Peel and chop onions, tomatoes, potatoes.
Place coriander seeds in the water.
Cook rice to packet instructions.
Heat butter in a heavy frying pan and sauté the pork until brown on all sides.
Transfer to a casserole dish using a slotted spoon.
Sprinkle with sugar and stir until the sugar dissolves completely.
Add the flour, salt and pepper to taste.
Stir till the meat is evenly coated in flour.
Add onions to the frying pan and sauté until transparent and soft.
Add the stock stirring well to scrape any sediment from the bottom of the pan and bring to the boil.
Lower the heat.
Mix coriander seed mixture with garlic and chilli and add to the pan.
Add the tomatoes and cook for 5 minutes.
Pour over pork.
Add potatoes.
Cover and place in the microwave.
Cook on high for 32 minutes stirring twice.
When 7 minutes remain, add the pineapple and stir.
