Seared Citrus Pork Loin

Ingredients
1/3 cup lime juice
3/4 cup olive oil
3 1/2 teaspoons lime and chilli blend
2 teaspoons grated ginger
1/4 cup honey
600g pork
500g potato
1 onion
1 egg
Salad

Method
Combine lime juice, olive oil, 1 1/2 teaspoons lime and chilli blend, ginger and honey.
Marinate the pork in this mixture while preparing the rest of the meal.
Peel potato.
Par boil and grate potato.
Peel and finely slice onion.
Combine potato, onion, egg and remaining lime and chilli blend.
Panfry tablespoons of the potato mixture for around 4 minutes.
Drain on absorbent paper.
Panfry or barbeque the pork for around 5 minutes.
Serve potato and pork with salad
