Pork with Tomatoes and Red Wine
Ingredients
500g pork
1 onion
400g can chopped tomatoes with herbs
150ml red wine
1 tablespoon tomato puree
150ml hot vegetable stock
1 teaspoon Italian mixed herbs
1 can mushrooms in butter sauce
2 zucchini
1 teaspoon Italian seasoning
2 teaspoons cornflour
Salt
Pepper
2 cups rice
Method
Cook rice to packet instructions.
Peel and chop onion.
Slice zucchini.
Dry fry pork and onion for 5 minutes.
Stir in tomatoes, red wine. Tomato puttee, stock, herbs, mushrooms, zucchini, and seasoning.
Bring to the boil.
Then cover and simmer for 15 minutes.
Blend the cornflour to a paste with just enough water and stir in to the port mixture.
Simmer uncovered for 2 minutes to thicken the sauce.
Season to taste and serve of a bed of rice.
