Pork with Mustard Cream and Pan-Fried Apples
Ingredients
1kg sweet potato
1 tablespoon oil
4 pork loin chops
50g butter
1 apple
1 cup thickened cream
2 tablespoons apple cider vinegar
1 tablespoon wholegrain mustard
Green beans
Method
Peel and chop sweet potato.
Cut apple into thick wedges.
Cook the sweet potato in a saucepan of boiling water for 10 minutes.
Drain and mash.
Cook beans to liking.
Meanwhile heat the oil in a frying pan over medium high heat.
Add the pork and cook for 3 minutes each side.
Transfer to a plate and cover with foil to keep warm.
Reduce the heat to medium low.
Add butter to the frying pan and melt.
Add apples and cook turning occasionally for 5 minutes.
Transfer to a plate.
Add cream, vinegar and mustard to frying pan and boil stirring for 5 minutes.
Serve pork on mash with green beans.
Drizzle with mustard sauce.
