Pork with Hoi sin Sauce
Ingredients
500g pork fillet
1/2 cup hoi sin sauce
1/2 cup chicken stock
1 teaspoon chilli paste
1 teaspoon crushed garlic
1 teaspoon grated ginger
1 tablespoon oil
1 onion
1 bunch Bok Choy
1 bunch broccolini
1 tablespoon coriander leaves
2 cups rice
Method
Slice pork. Combine hoi sin sauce, chicken stock, chilli, garlic and ginger.
Pour sauce mixture over pork, mixing well to ensure all pork is coated.
Allow to marinate for 20 minutes stirring occasionally.
Cook rice to packet instructions.
Peel and slice onion.
Quarter bok Choy.
Segment broccolini.
Heat oil in wok.
Stir-fry meat in batches reserving marinade.
Place meat on a plate.
Add onion to wok.
Stir fry for 1 minute.
Return meat to wok with vegetables, coriander and marinade.
Stir fry for 2 minutes or until meat and vegetables are cooked as desired.
Serve immediately on a bed of rice.
