Pork and Vegetable Curry
Ingredients
1 tablespoon oil
1 onion
2 teaspoons crushed garlic
500g pork mince
2 teaspoons red curry paste
1 tin coconut milk
1/2 wombok
1 tablespoon coriander leaves
400g fresh noodles
Method
Peel and chop onion.
Shred wombok.
Heat oil in wok.
Sauté onion and garlic until onion is tender.
Add mince.
Brown well, breaking up with a spoon as it cooks.
Mix in curry paste.
Cook stirring for 2 minutes.
Blend in coconut milk, cabbage and coriander.
Simmer for 2 minutes.
Stir through noodles.
Simmer for 5 minutes.
Serve in bowls.
