Pork and Rice

Ingredients
4 pork chops
2 tablespoons butter
1 onion
2 tomatoes
1 capsicum
1 cup rice
1 tin tomato juice
Salt
Pepper
Dinner rolls

Method
Cook rice to packet instructions.
Cook chops on the BBQ with butter.
Peel onion.
Slice onion, tomatoes and capsicum.
Place cooked chops in a casserole dish.
Cover with a layer of onion, tomato and capsicum.
Pour over the tomato juice.
Cover with rice.
Sprinkle lightly with salt and pepper.
Bake in a moderately hot over for around 20 minutes.
