Pork and Mango Stir-Fry
Ingredients
500g pork strips
1/4 cup chopped coriander leaves
1 teaspoon chopped chilli
2 teaspoons crushed garlic
2 teaspoons oil
100g snow peas
1 onion
425g can mango
1/4 cup sweet chilli sauce
1 tablespoon teriyaki sauce
2 cups Rice
Method
Cook rice to packet instructions.
Trim snow peas.
Peel onion.
Slice onion.
Drain mangos.
Toss pork with combined coriander, chilli, garlic and oil.
Stir-Fry pork in batches in a hot wok.
Transfer to a plate.
Add snow peas and onion to wok.
Stir-fry for 2 minutes.
Return pork to wok with mango, chilli sauce and teriyaki sauce.
Stir-fry for 2 minutes until heated through.
Serve on a bed of rice.
