Plum Pork with Coleslaw

Ingredients
4 pork cutlets
1/3 cup sweet plum sauce
500g chat potatoes
3 tablespoons olive oil
1kg packet Woolworths coleslaw
1/4 cup fresh parsley leaves
2 tablespoons lemon juice
Sour cream

Method
Cut chat potatoes in half.
Place pork into a shallow dish.
Spoon plum sauce over both sides of the pork.
Set aside.
Cook the potatoes in a saucepan of boiling water.
Drain.
Preheat frying pan to medium.
Add the olive oil and add the potatoes.
Cook until golden.
Remove from frying pan and set aside.
Meanwhile combine coleslaw, parsley, lemon juice and two tablespoon oil.
Add pork cutlets to frying pan.
Cook 3 minutes each side.
Serve immediately with coleslaw, potatoes and sour cream.
