Pineapple Pork Curry
Ingredients
500g diced pork
1 can pineapple pieces
2 tomatoes
1 can Malaysian mild curry sauce
Juice of a lemon
1 teaspoon sugar
300g noodles
Method
Cut tomatoes into wedges.
Remove pineapple from can and drain excess liquid.
Pour curry sauce into a fry pan and bring to the boil.
Add pork and stir gently for 3 minutes.
Add tomatoes, pineapple pieces, lemon juice and sugar.
Cook on high for a further 3 minutes.
Reduce heat to low and simmer for a further 5 minutes.
Cook noodles to packet instructions.
Drain noodles and serve as an accompaniment to the curry.
