Pea and Ham Soup
Ingredients
16 slices bread
800g ham hock
2 cups green split peas
2 onions
2 potatoes
2.5L cold water
2 cups frozen peas
1 cup water extra
Method
Rinse split peas under cold water until water runs clear.
Drain.
Peel and chop onion and potato.
Heat oil in a large saucepan, cook onion, stirring about 2 minutes.
Add hock, split peas and potato, cook, stirring 2 minutes.
Add water, bring to the boil, simmer covered 1 1/2 hours.
Remove hock from soup, shred the ham.
Discard hock.
Stir in frozen peas, cook covered about 5 minutes.
Stir in ham and mash.
Add extra water if necessary bring to the boil, simmer covered 5 minutes.
Serve with bread
