Gilligan's Goulash

1 teaspoon peanut oil
500g pork
1 teaspoon ginger
1 teaspoon garlic
2 tablespoons cornflour
1/2 cup cold water
2 tablespoons soy sauce
1 tablespoon honey
1 cup orange juice
3 cups frozen mixed vegetables
2 cups rice

Cook rice to packet instructions.
Cut pork into strips.
Heat oil in a large pan.
Add pork, ginger and garlic.
Sauté until meat is browned.
Stir constantly.
Set aside in a separate bowl.
Mix cornflour with ½ cup cold water.
Add soy sauce and honey.
Pour mixture into the pan.
Add orange juice and heat through.
Add vegetables, toss, and cover for 2 minutes.
Add the pork and toss again.
Lower heat and simmer until rice is cooked.
Serve on a bed of rice.
