Bacon and Corn Fritter Stack
Ingredients
1 cup self-raising flour
1 teaspoon baking powder
1 cup milk
1 egg
1 can corn kernels
1 tablespoon butter
250g bacon rashers
1 onion
100g semi dried tomatoes

Method
Peel and slice onion.
Sift flour and baking powder together.
Make a well in the centre of flour mixture.
Combine milk and beaten egg.
Pour into well in flour whisking to combine.
Drain corn kernels and add to batter stirring to combine.
Heat a frying pan over medium heat.
Add butter.
Pour in a ladle of batter for each fritter.
Cook reasonably slowly.
Flip fritters and cook the other side.
Transfer cooked fritters to a plate under the griller to keep warm.
As you cook fritters put bacon under the grill and cook to taste and cook onion to liking in a frying pan.
Serve fritters toped with bacon, semi dried tomatoes and onion.
Serve with salad.
