Tuna Macaroni Cheese
Ingredients
400g macaroni
olive oil spray
1 onion
1 celery stalk
440g can corn kernels
2 tablespoons cornflour
375ml evaporated milk
1/2 cup chicken stock
1/2 cup grated cheese
440g can tuna in brine
Method
Cook pasta according to packet instructions.
Peel onion.
Finely chop celery and onion.
Meanwhile spray a large pan with oil and heat.
Add the onion and celery and cook for 3 minutes.
Stir in the corn. Put the cornflour into a small bowl and gradually add 1/3 cup milk stirring until smooth.
Add the remaining milk and the stock to the pan then gradually add the cornflour mixture, stirring constantly.
Keep stirring until the sauce boils and thickens.
Remove from heat and stir in the cheese until melted.
When the pasta is cooked, drain.
Stir in sauce and add tuna.
Stir to combine, and serve immediately.
