Tomato and Chilli Pasta

Ingredients
1 tablespoon olive oil
1 onion
1 teaspoon chilli
2 teaspoons crushed garlic
1kg tomatoes
1/2 cup vegetable stock
1 jar of kalamata olives
1 tablespoon caster sugar
2 tablespoons fresh parsley
1 packet pasta
Parmesan cheese

Method
Peel and finely chop onion.
Chop tomatoes.
Cook pasta to packet instructions.
Heat the oil in a saucepan over a medium heat.
Add the onion, chilli and garlic.
Cook stirring for 5 minutes.
Add the tomatoes, stock and olives to the pan.
Cook, covered for 10 minutes.
Cook uncovered for a further 10 minutes.
Stir in the sugar and parsley.
Drain pasta and divide among serving bowls.
Top with the tomato sauce and parmesan cheese.
