Sweet and Sour Pork Noodles
Ingredients
440g packet hokkien noodles
1 teaspoon oil
600g stir-fry pork
2 large carrots
4 teaspoons grated ginger
4 shallots
100g snow peas
300g jar sweet and sour sauce
Method
Peel and cut carrots into sticks.
Trim and slice shallots.
Trim snow peas.
Cook noodles in a saucepan of boiling salted water for 3 minutes.
Drain and return to the pan.
Cover to keep warm.
Heat oil in a wok over high heat.
Stir-fry the pork and carrots for 6 minutes until browned and the carrot is softened.
Add the ginger.
Stir fry for 2 minutes.
Reduce the heat to medium.
Add the shallots, snow peas and sauce.
Cook for 2 minutes.
Add the noodles.
Toss to combine and serve in bowls.
