Pasta with Roasted Mushrooms and Tomatoes

Ingredients
600g different types of mushrooms
250g cherry tomatoes
1 cup chicken stock
500g pasta
1/4 cup torn fresh basil leaves
1/4 cup grated cheese

Method
Cut mushrooms up into quarters.
Halve cherry tomatoes.
Combine mushrooms, tomatoes and stock in a baking dish.
Bake at 250C for 20 minutes.
Meanwhile cook pasta according to packet instructions.
Gently toss mushroom mixture through pasta sprinkle with basil and cheese.
