Pasta Carbonara

Ingredients
2 tablespoons olive oil
150g diced bacon
4 shallots
2 teaspoons crushed garlic
125g sliced mushrooms
1/2 cup white wine
300ml cream
Seasonings to taste
500g pasta

Method
Slice shallots.
Cook pasta to packet instructions.
Heat oil in a large frying pan.
Sauté bacon, shallots and garlic for 2 minutes.
Add mushrooms.
Sauté until mushrooms are tender.
Pour in wine.
Heat, stirring until reduced.
Blend in cream and seasonings.
Simmer gently until thickened slightly.
Drain pasta and add to frying pan.
Toss through hot sauce over low heat.
