Mushroom Pasta

Ingredients
500g penne pasta
1/4 cup olive oil
1 leek
2 teaspoons crushed garlic
500 sliced mushrooms
1 cup white wine
1 teaspoon powdered stock
300g carton lite sour cream
Grated cheese

Method
Halve leek and thinly slice.
Cook pasta according to packet instructions.
Heat oil in a large non stick frying pan over medium heat.
Add leek and garlic.
Cook stirring for 4 minutes.
Add mushrooms cook until mushrooms are tender.
Add wine and stock powder and cook for 1 minute.
Remove from heat.
Add sour cream.
Stir to combine.
Season with salt and pepper.
Drain pasta.
Spoon into bowls.
Spoon mushroom sauce over pasta.
Top with cheese and serve.
