Meatballs and Noodles

Ingredients
500g pork mince
1 onion
½ cup breadcrumbs
½ cup chopped semi sun-dried tomatoes
1 egg
1 tablespoon chopped basil
500g pasta
425g chopped tomatoes
½ cup vegetable stock
3 shallots
2 teaspoons crushed garlic

Method
Peel and grate onion.
Beat egg.
Combine mince, onion, breadcrumbs, sun-dried tomatoes, egg and basil in a bowl.
Form into walnut sized balls.
Arrange on a baking tray.
Bake at 180C for 30 minutes.
Cook pasta to packet ingredients.
Combine chopped tomatoes, stock, shallots, and garlic in a saucepan.
Bring to the boil.
Reduce heat simmer for 5 minutes.
Serve pasta topped with meatballs and sauce.
