Matriciana Pasta

Ingredients
1 tablespoon olive oil
3 teaspoons crushed garlic
6 shallots
1 teaspoon chilli paste
250g diced bacon
2 x 400g cans diced tomatoes
565g jar tomato pasta sauce
Pinch caster sugar
625g packet fresh beef ravioli

Method
Thinly slice shallots.
Heat oil in a frying pan over medium heat.
Add garlic and shallots.
Cook stirring for 3 minutes.
Add chilli and bacon.
Cook for 3 minutes.
Add tomatoes and pasta sauce.
Increase heat to high and bring to the boil.
Reduce heat and simmer for 5 minutes.
Taste and season with sugar, salt and freshly ground pepper.
Meanwhile, cook pasta in a large saucepan of boiling salted water, following packet direction, until just tender.
Drain and return to saucepan.
Add pasta sauce to saucepan ravioli.
Toss over low heat until well combined.
Spoon into bowls and serve.
