Golden Chicken Pasta
Ingredients
500g Pasta shapes
1 onion
2 carrots
2 teaspoons tomato puree
1/2 teaspoon mixed herbs
4 chicken thighs
salt
pepper
Method
Cook pasta according to packet instructions.
Chop onion and grate carrot. Cut chicken into strips.
Cook chicken until golden.
Once the chicken is cooked remove from the pan.
Put the onion, carrots, tomato purée and some water, herbs into the pan and cook slowly, covered, for 10 minutes.
Add the cooked chicken and heat with the sauce.
Add more water if the sauce looks dry.
Drain pasta and mix together until the pasta is covered with the golden sauce.
