Gnocchi with a Quick Tomato Sauce
Ingredients
2 400g packets gnocchi
½ cup cheese
Basil
1 onion
1 tablespoon tomato puree
2 400g cans chopped tomatoes in Italian sauce
300ml vegetable stock
1 teaspoon sugar
Salt
Pepper
Method
Peel and chop onion.
Put onion, tomato puree, tomatoes, vegetable stock, sugar and salt and pepper into a saucepan.
Bring to the boil and simmer uncovered for 20 minutes.
Cook the gnocchi according to the packet instructions.
Spoon a little sauce in the base of a bowl.
Add drained gnocchi and pour over the remaining sauce.
Sprinkle on the chesses and scatter the basil over and serve.
