Curried Egg Pasta
Ingredients
1 onion
50g butter
2 teaspoons curry powder
3 tablespoons flour
3 cups milk
Salt
Pepper
6 hard-boiled eggs
200g fettuccine
2 tablespoons parsley
2 tablespoons coriander
Method
Adjust curry to taste.
2 teaspoons is very weak.
Cook pasta in boiling salted water for 15 minutes.
Peel onion and chop finely.
Melt butter in a saucepan.
Sauté onion for 3 minutes.
Add curry powder and sauté for 1 minute.
Stir in flour and cook until frothy.
Remove from heat and stir in milk.
Return to heat and cook, stirring, until mixture boils and thickens.
Season with salt, pepper, parsley and coriander.
Shell eggs and chop roughly.
Mix into curry sauce.
Drain pasta.
Pour egg sauce over the pasta.
