Creamy Mushroom and Bacon Pasta Sauce

Ingredients
250g Swirl pasta
1 tablespoon olive oil
1 onion
200g diced bacon
250g sliced mushrooms
1 cup sour cream
2 eggs
1/2 cup grated cheese
parsley to taste

Method
Cook pasta to packet instructions.
Peel and finely chop onion.
Heat oil in pan, cook onion, and bacon until onion is soft.
Add mushrooms, cook stirring until mushrooms are soft.
Beat eggs lightly.
Combine sour cream, egg, cheese and parsley.
Stir over low heat until heated through.
Serve sauce over pasta.

Pasta Carbonara (1)
Serves: 4

Ingredients
500g spaghetti
2 tablespoons olive oil
3 teaspoons crushed garlic
250g diced bacon
6 shallots
375ml can light and creamy evaporated milk
3 eggs
1 cup grated cheese
parsley

Method
Slice shallots.
Cook spaghetti to packet instructions.
Drain.
Heat oil in a saucepan over medium heat.
Add garlic, bacon and shallots.
Cook until golden.
Whisk milk and eggs together until combined.
Add spaghetti to saucepan.
Add milk and egg and toss over low heat for 1 minute. add cheese and parsley.
Season with salt and pepper.
