Chicken Pizzaiola
Ingredients
Oil
3 chicken thighs
1 green capsicum
1 garlic clove
100 g mushrooms
1 400g can chopped tomatoes
1 teaspoon dried mixed herbs
Handful of olives
Salt
Pepper
1 packet of pasta or spaghetti
Method
Cut chicken and capsicum into strips.
Slice mushrooms and garlic.
Cook spaghetti or pasta to packet instructions.
Add oil to fry pan.
Add the chicken and capsicum strips to the pan.
Cook for 2 minutes and turn over.
Cook for a further 2 minutes.
Add garlic and mushrooms and cook for a further 2 minutes.
Add tomatoes with their juice, herbs and olives to the pan.
Simmer for 5 minutes and then season to taste with salt and pepper.
Once the pasta or spaghetti is cook drain and serve.
Spoon sauce over the pasta or spaghetti.
