Auntie Rose's Pasta
Ingredients
8 chicken wingettes
1 tablespoon olive oil
4 pork chops
1 onion
2 teaspoons crushed garlic
1 tablespoons red wine
300g jar tomato pasta sauce
1 cup tomato paste
4 cups water
Fresh basil leaves
500g penne pasta
Method
Heat oil in a large electric frying pan.
Cook chicken and pork in batches until browned all over.
Remove from pan.
Finely chop onion.
Cook onion and garlic in the same pan, stirring until onion is soft.
Add red wine, cook stirring until liquid has evaporated by half.
Stir in pasta sauce , paste and water.
Return chicken and pork to pan, bring mixture to boil.
Simmer, uncovered for 2 hours.
Cook pasta according to packet instructions.
Just before serving stir in basil.
