Stir-fried Beef and Snow Peas
Ingredients
500g rump steak
2 tablespoons soy sauce
½ teaspoon grated ginger
2 tablespoons peanut oil
200g snow peas
1 ½ teaspoons cornflour
½ cup beef stock
1 teaspoon soy sauce – extra
¼ teaspoon sesame oil
2 cups rice
Method
Cook rice to packet instructions.
Finely slice the steak.
Top and tail the snow peas.
Place meat in a dish.
Mix soy and ginger and stir through meat to coat.
Heat the peanut oil in a wok swirling gently to coat base and sides.
Add the beef and snow peas and stir-fry over high heat until the meat is cooked.
Dissolve the cornflour in a little of the stock.
Add to the wok with the remaining stock, extra soy and the sesame oil.
Stir until sauce boils and thickens.
Serve on a bed of rice.
