Steak Diane
Ingredients
3 tablespoons butter
2 tablespoons oil
6 steaks
3 teaspoons crushed garlic
4 tablespoons brandy or red wine
4 tablespoons Worcestershire sauce
4 teaspoons tomato sauce
1 cup thickened cream
4 potatoes
3 cups frozen vegetables
Method
Peel and cut potatoes.
Boil in water and mash once cooked.
Simmer frozen vegetables in water.
Heat half the butter and oil in a frying pan.
Cook steaks for 2 minutes each side.
Transfer to a plate.
Heat remaining butter and oil in same pan.
Sauté garlic for 1 minute.
Stir in wine or brandy.
Cook stirring for 1 minute.
Blend in Worcestershire sauce and tomato sauce.
Bring to the boil.
Reduce heat and blend in cream. Return meat to pan.
Warm through for 1 to 2 minutes.
Serve steaks with mashed potato and vegetables topped with the sauce.
