Orange Flavoured Meat and Bean Casserole

Ingredients
500g beef
1 can butter beans
1 onion
1 carrot
½ teaspoon dried rosemary
½ cup water
1 orange
1 tablespoon cornflour
2 teaspoons curry powder
1 tablespoon parsley
2 cups rice

Method
Dice beef.
Peel carrot and onion. Slice onion and carrot.
Brown meat and onion in a non-stick pan.
Place meat, beans, onion, carrot, rosemary and water in a casserole dish.
Cook at 160C oven for 20 minutes.
Cook rice to packet instructions.
Combine the juice of the orange, cornflour and curry.
Stir into the casserole mixture and cook for a further 5 minutes.
Serve the rice followed by the meat casserole and sprinkle the parsley on top.
