Microwave beef Stroganoff
Ingredients
1 tablespoon olive oil
1 onion
2 tablespoons tomato paste
1/2 cup plain flour
1 1/2 tablespoons paprika
1kg beef strips
420g can cream of mushrooms soup
1 1/2 cups beef stock
2 tablespoons tomato sauce
1 tablespoon Worcestershire sauce
100g mushrooms
1/2 cup sour cream
2 cups rice
Method
Peel and chop onion.
Place oil and onion into a 3L capacity dish.
Microwave uncovered for 2 minutes on high.
Add tomato paste.
Cook for a further minute on high.
Combine flour, paprika, salt and pepper.
Add beef and toss.
Add to onion mixture.
Stir in soup, stock and sauces.
Microwave covered for 1 hour on medium low power, stirring every 10 minutes.
Cook rice according to packet instructions.
Add mushrooms and sour cream.
Microwave on medium low for 10 minutes.
Sprinkle with parsley and serve on a bed of rice.
