Marengo-Style Casserole
Ingredients
1kg diced beef
¼ cup seasoned flour
2 tablespoons oil
1 leek
1 sweet potato
1 capsicum
1 teaspoon crushed garlic
125g can mushrooms
425g can tomatoes
2 cups beef stock
½ cup red wine
2 tablespoons tomato paste
Method
Place meat into a plastic bag with flour shaking well to coat.
Slice leek.
Peel and chop sweet potato.
Deseed and chop capsicum.
Heat oil in a large frying pan.
Cook meat until browned.
Transfer to a casserole dish.
Sauté leek, sweet potato, capsicum and garlic in the pan for 1 minute.
Add mushrooms.
Cook stirring for 1 minute.
Stir in tomatoes.
Pour over meat stirring.
Add stock, wine and tomato paste to the casserole dish string it in.
Bake covered in a moderate oven for 1 ¼ hours or until meat is tender.
