Garlic Beef and Cashew Nut Stir Fry
Ingredients
500g stir fry beef
1 1/2 tablespoons soy sauce
2 tablespoons oil
1 carrot
6 shallots
1 head broccoli
3 teaspoons crushed garlic
2/3 cup roasted cashew nuts
2 teaspoons Supreme Gravy Mix
1/3 cup water
1 tablespoon brown sugar
1 teaspoon sesame oil
2 tablespoons red wine
1 cup rice
Method
Peel and thinly slice carrot.
Slice shallots.
Break broccoli into florets.
Cook rice to packet instructions.
Combine beef with 1 tablespoon soy sauce, mix well, cover and refrigerate for 15 minutes.
Heat half the oil over high heat in a large frying pan.
Cook beef for 2 minutes then remove and set aside.
Heat remaining oil, add the carrot and cook for 2 minutes.
Add the shallots, broccoli and garlic and cook for a further 2 minutes.
Return beef to pan and add cashew nuts.
Combine the remaining soy sauce, gravy mix, water, brown sugar, sesame oil and red wine.
Pour over the beef and cook, stirring continuously until the sauce has thickened.
Serve with rice.
