Chilli Beef and Corn Stir Fry

Ingredients
2 tablespoons oil
1 teaspoon crushed garlic
1 teaspoon ginger
600g beef strips
150g snow peas
1 red capsicum
425g can corn kernels
2 tablespoons sweet chilli sauce
1 tablespoon cornflour
1 1/2 cups beef stock
1/2 teaspoons sesame oil
1 cup rice

Method
Cook rice to packet instructions.
Top and tail snow peas.
Thinly slice capsicum.
Drain corn.
Heat oil in a wok.
Add garlic, ginger and beef.
Stir fry until beef is browned.
Stir in snow peas and capsicum and cook for 2 to 3 minutes.
In a small bowl mix together the chilli sauce, cornflour, beef stock and sesame oil.
Add to the wok with the corn and cook stirring until the sauce thickens.
Serve on a bed of rice.
