Chilli Beans and Beef
Ingredients
2 tablespoons olive oil
750g diced beef
2 onions
2 teaspoons crushed garlic
2x 425g cans tomatoes
2x 425g cans red kidney beans
½ cup water
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon chilli
Salt
Pepper
Parsley
2 cups Rice
Method
Peel onions.
Dice onions.
Drain kidney beans.
Heat oil in a large frying pan over medium heat.
Add meat and cook stirring until browned.
Remove from pan.
Sauté onion and garlic in the same pan until onion is tender.
Stir in tomatoes, beans, water, paprika, cayenne pepper, chilli and salt and pepper.
Bring to the boil. Return meat to pan.
Reduce heat.
Simmer covered for half an hour.
Cook rice to packet instructions.
Spoon onto a bed of rice and sprinkle with parsley.
