Cajun Beef Roll
Ingredients
500g beef steak
1 onion
1 red capsicum
2 tablespoons Cajun seasoning
3 tomatoes
1 long French bread stick
Lettuce leaves
Method
Thinly slice beef.
Peel and slice onion.
Slice capsicum.
Cook beef until it is browned and cooked as desired.
Add onion, capsicum and seasoning to the same pan.
Cook stirring until onion is browned lightly.
Cut tomatoes into 8 wedges each, add to pan simmer uncovered for 15 minutes.
Return beef to pan.
Toss gently to combine tomato mixture.
Trim ends from bread stick.
Third stick then split pieces almost all the way through.
Line bread with lettuce.
Divide beef mixture among bread pieces just before serving
