Beef Madeira
Ingredients
750g Steak
¼ cup flour
1 onion
2 carrots
1 teaspoon crushed garlic
1 cup beef stock
½ teaspoon paprika
420g tin mixed beans
1 green capsicum
rice
Method
Cube the meat. Peel and slice the onion, carrots.
Slice the capsicum.
In a 3 litre casserole dish, combine meat and flour.
Mix well.
Add onions and carrots.
In a jug combine garlic, beef stock and paprika.
Stir well.
Pour over beef.
Cook covered for 22 minutes in the microwave on medium stirring 2 or 3 times during cooking.
Cook rice to packet directions.
Add beans and capsicum.
Cover and cook for a further 22 minutes on medium stirring twice during cooking.
Serve on a bed of rice.
