Beef and Asian Greens Stir-Fry (1)
Ingredients
600g beef strips
2 tablespoons ketcap manis
2 tablespoons sweet chilli sauce
2 teaspoons crushed garlic
3 teaspoons grated ginger
2 tablespoons olive oil
1 onion
1 bunch bok choy
200g snow peas
1 red capsicum
1 cup rice
Method
Peel and cut into wedges the onion.
Top and tail the snow peas.
Slice capsicum.
Combine beef, ketcap manis, sweet chilli sauce, garlic and ginger in a ceramic dish.
Mix well.
Cover and refrigerate for 30 minutes.
Cook rice to packet instructions.
Heat a wok over high heat until hot.
Add 2 teaspoons of oil and swirl to coat.
Add one third of the beef.
Stir fry until brown.
Remove to a plate.
Repeat twice with oil and remaining beef.
Add remaining oil to wok.
Heat until hot.
Add onion.
Stir fry for a minute.
Add snow peas, capsicum and bok choy.
Stir fry for 2 minutes.
Add beef and stir-fry for a further 2 minutes.
Serve on a bed of rice.
