Sweet Lamb Curry

Ingredients
2 tablespoon olive oil
1 onion
1 teaspoon crushed garlic
2 tablespoons curry powder
1kg diced lamb
425g can tomatoes
1 ½ cups beef stock
2 tablespoons vinegar
1 tablespoon brown sugar
2 carrots
2 zucchinis
1 capsicum
1 apple
1/3 cup sultanas
Salt
Pepper
¼ cup thickened cream
Coriander
2 cups rice

Method
Peel and slice onion, and carrots.
Deseed capsicum.
Slice zucchinis and capsicum.
Core and chop apple.
Heat oil in a large saucepan.
Sauté onion and garlic until onion is tender.
Stir in curry powder.
Cook 1 minute.
Add lamb cook stirring until well coated.
Stir in tomatoes, stock, vinegar and sugar.
Bring to the boil.
Reduce heat.
Simmer uncovered for 1 hour.
Cook rice to packet instructions.
Stir in vegetables, apple, sultanas and seasonings.
Simmer for a further 15 minutes.
Blend in cream and coriander.
Heat through.
Serve on a bed of rice.
