Mediterranean-Style Veal Chops
Ingredients
2 tablespoons butter
1 tablespoon oil
4 chops
Salt
Pepper
2 large green capsicums
3 tomatoes
1 tablespoon basil
1 teaspoon sugar
3 cups chicken stock
2 cups rice
Method
Slice the capsicum and tomatoes.
Cook rice to packet instructions.
Melt the butter and oil together in an electric frypan.
Fry the chops quickly until browned on both sides.
Season with salt and pepper to taste.
Fry the capsicum until soft.
Add tomatoes, basil, sugar and stock.
Boil for 3 minutes.
Return chops to the pan and simmer, uncovered for 30 minutes.
Serve on a bed of rice.
