Lamb and Hoisin Stir-fry
Ingredients
1 tablespoon oil
1 onion
2 teaspoons crushed ginger
2 teaspoons crushed garlic
750g diced lamb
½ cup stock
¼ cup hoi sin sauce
1 tablespoon soy sauce
1 teaspoon brown sugar
200g snow peas
2 cups rice
Method
Peel and slice onion.
Trim snow peas.
Cook rice to packet instructions.
Heat oil in a large frying pan.
Stir-fry onion, ginger and garlic until onion is tender.
Add lamb.
Stir-fry until well browned.
Blend in stock, hoi sin sauce, soy sauce and sugar.
Cook stirring for 3 minutes.
Toss through peas.
Cook, stirring for 2 minutes.
Serve on a bed of rice.
