Harira
Ingredients
2 tablespoons olive oil
2 onions
1 1/2 teaspoons ground ginger
1/2 teaspoon ground cinnamon
2 400g cans tomatoes
1 1/2 litres vegetable stock
pinch saffron threads
1kg diced lamb
1 cup rice
1 cup lentils
2 400g cans chickpeas
1 kg broad beans
1.2 cup coriander leaves
1/2 cup parsley
Method
Peel and chop onion.
Peel broad beans.
Heat oil in a large saucepan.
Cook onion, ginger, and cinnamon stirring until onion is soft.
Add undrained crushed tomatoes, stock, saffron and lamb.
Bring to the boil.
Simmer, covered for 1 1/2 hours.
Add rice and lentils, simmer uncovered about 20 minutes.
Add chickpeas and beans, simmer uncovered until hot.
Just before serving stir through coriander and parsley.
