Roast Lemon and Garlic Drumsticks
Ingredients
12 chicken drumsticks
1 tablespoon olive oil
60g melted butter
1/2 cup chopped parsley
Juice of 1 lemon
3 cloves of garlic crushed
Rice
Method
Preheat oven to 200C.
Place drumsticks into a lightly greased shallow roasting dish.
Combine oil and 1 tablespoon of butter.
Drizzle over drumsticks.
Season with salt and pepper.
Toss until well coated.
Roast drumsticks for 40 minutes.
Combine remaining butter, parsley, lemon juice and garlic in a jug.
Cook rice to packet instructions.
Serve drumsticks on a bed of rice.
Drizzle sauce over drumsticks.
