Quick chicken and Broccolini Stir fry
Ingredients
450g packet hokkien noodles
1 1/2 tablespoons olive oil
500g chicken thigh fillets
1 onion
1 bunch broccolini
1 red capsicum
1 small tin sliced mushrooms
2 teaspoons crushed garlic
1 tablespoon water
4 tablespoons soy sauce
4 tablespoons oyster sauce
4 tablespoons honey
1 cup peanuts
Method
Slice chicken.
Peel onion and half.
Thinly slice onion.
Cut broccolini into 4cm lengths.
Cut capsicum into thin strips.
Mix soy sauce, oyster sauce, and honey.
Place noodles into a heat proof bowl.
Pour over boiling water.
Set aside for 5 minutes.
Drain.
Separate noodles.
Heat 1 tablespoon of oil in a large wok over high heat.
Stir fry chicken for 5 minutes.
Transfer to a plate.
Heat remaining oil in wok over high heat.
Add onion, broccolini, capsicum, mushrooms and garlic.
Stir fry for 2 minutes.
Add water.
Cover and cook for 1 minute.
Add sauces, noodles, chicken and peanuts to wok.
Toss together over hotplate for 2 minutes or until heated through.
Serve immediately.
