Lemon Chicken (1)
Ingredients
1 clove of garlic
1 lemon
2 tablespoons plain flour
500g chicken fillets
3 tablespoons olive oil
2 teaspoons ginger
2 cups chicken stock
1 teaspoon white sugar
1 egg yolk
2 tablespoons parsley
Salt
Pepper
2 cups rice
Method
Cook rice to packet instructions.
Peel and chop the garlic.
Mix together garlic and flour in a bowl.
Cut the chicken into bite size pieces.
Toss in the flour mixture until well coated.
Heat the oil in a large pan.
Cook the chicken for 5 minutes on one side.
Turn over and cook for 5 minutes on the other.
Put ginger, any remaining flour, stock and sugar.
Bring to the boil and cook for 5 minutes.
Squeeze the juice from the lemon.
Blend with the egg yolk and add to the pan, stirring constantly until the sauce thickens.
Stir in the parsley and season.
Serve on a bed of rice.
