Italian Chicken Casserole
Ingredients
2 tablespoons live oil
1 onion
500g chicken thighs
175g packet Italian chicken casserole recipe base
2 400g diced Italian tomatoes
1 jar black olives
oregano
2 cups rice
Method
Cube chicken.
Peel and thinly slice onion.
Cook rice to packet instructions.
Heat oil in electric frypan over medium heat.
Add onion and cook for 1 minute.
Add chicken and cook stirring until golden.
Stir in recipe base, and tomatoes.
Bring to the boil.
Reduce heat to medium low.
Cover and simmer stirring occasionally for 10 minutes.
Stir through olives and sprinkle with oregano.
Serve on a bed of rice.
