Indonesian Chicken in Coconut Milk

Ingredients
12 chicken drumsticks
2 teaspoons crushed garlic
1 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons ground cumin
2 teaspoons ground coriander
1/2 teaspoon ground fennel
1/2 teaspoon ground cinnamon
3 tablespoons oil
1 cup coconut milk
1 cup water
1 tablespoon lemon juice
2 cups rice

Method
Combine garlic, salt, pepper, cumin, coriander, fennel, cinnamon and 2 tablespoons oil.
Rub the mixture thoroughly over the chicken.
Marinate covered for 1 hour in the refrigerator.
Heat remaining oil in a large pan.
Add the chicken and cook quickly over medium high heat until well browned.
Combine the coconut milk, water and lemon juice.
Pour over chicken, cover and simmer for 40 minutes with around 20 minutes to go cook rice to packet instructions.
Serve on a bed of rice.
