Indian Chicken

Ingredients
1 tablespoon oil
1 onion
1 tablespoon crushed ginger
2 teaspoons crushed garlic
2 teaspoons ground coriander
2 teaspoons ground cumin
3 tomatoes
1 tin coconut milk
1 tablespoon chilli sauce
Salt
Pepper
500g chicken thighs
Coriander leaves
2 cups rice

Method
Peel onion.
Chop onion, tomatoes and chicken.
Place oil in a microwave safe dish.
Microwave on high for 30 seconds.
Cook rice to packet instructions.
Add onion, ginger and garlic.
Cook for 3 minutes on high.
Stir in coriander and cumin.
Cook for 30 seconds.
Stir in tomatoes, coconut milk, chilli sauce and salt and pepper to taste.
Cook for 2 minutes on high.
Mix in chicken.
Cook covered for 10 minutes.
Stir in coriander leaves.
Serve on a bed of rice.
